Chinese Chicken Salad with Red Chile Peanut Dressing

Butler Green Farms is my local CSA farm. This week’s produce included romaine lettuce, sugar snap peas (so sweet!), kohlrabi, delicate spring carrots and some beautiful red Japanese radishes. Perfect ingredients for this unbelievable Chinese Chicken Salad recipe by Bobby Flay.

This was truly the best Chinese Chicken Salad dressing I’ve ever made or eaten. Everyone in my family had seconds and the bowls were scraped clean. Fortunately, I hid a small portion for my lunch today!

The recipe calls for Chipotle Pepper Puree. Several years ago I discovered this Spicy Chipotle Garnishing Squeeze from Terrapin Ridge Farms and used that in the recipe. PERFECTION! The squeeze mixed with sour cream is the perfect garnish for fish tacos. I love this product so much I bought everyone on the Pink Chalk team a bottle this spring. We talk about food a LOT around here! Now I’m excited because everyone will be able to make this dressing with the squeeze.
